Eat 50g each serving
Trim and wash the eggplant, cut off the stem, slice lengthwise in half, then cut again for bite-sized pieces.
Place the eggplant pieces in a bowl, add 1/4 teaspoon salt, mix, and let sit for about 20 minutes to draw out moisture.
Cut the tomato in half and remove the stem.
Slice the tomato into bite-sized pieces (it's easier to cut vertically standing up than laying it down).
Place the garlic on top of the tomato in a bowl, add 1/4 teaspoon salt, and gently tap the bowl to mix (this helps the tomato firm up).
Squeeze the moisture from the salted eggplant.
When the pan is heated, stir-fry just the tomatoes without oil.
Once the tomatoes are partially cooked, add the eggplant and stir-fry.
When the eggplant is slightly cooked, add 5g (one spoon) of olive oil.
Stir-fry with two spoons for 3 minutes, then it's ready!
