You can substitute chicken tenderloin with bacon or other meats. Instead of tomato puree, you can use ketchup mixed with Sriracha.
Wrap the frozen sweet pumpkin with plastic wrap, poke holes, and microwave for 4 minutes.
Add oil to a pan, then sauté chicken tenderloin and finely chopped onion. Cut the chicken in pieces as it cooks and season with black pepper.
While step 2 is cooking, take out the microwaved pumpkin and place it in the gratin dish. Mash the pumpkin, then mix in 3 tablespoons of allulose and 2 tablespoons of unsweetened almond milk.
Add tomato puree, 0.5 tablespoon chicken stock, black pepper, and chopped mushrooms to the pan, then stir-fry.
Pour everything from the pan over the mashed pumpkin in the gratin dish, sprinkle cheese on top, and bake in an air fryer at 180°C for 10 minutes.
