Wash the green beans, trim the ends, and chop them into ¼-inch pieces for even cooking.
Finely chop the onion and green chilies; set aside. In a bowl, combine grated coconut and turmeric powder.
Heat the vegetable oil in a large skillet over medium heat. When hot, add black mustard seeds and let them splutter for 15–20 seconds.
Add curry leaves and green chilies to the oil, sautéing for another 30 seconds until fragrant. Next, stir in chopped onions and cook for 2 minutes until softened.
Add chopped beans to the pan, season with salt, and toss well. Cover and cook on medium-low heat for about 8–10 minutes, stirring occasionally to avoid burning.
Uncover and increase heat to medium. Stir in the coconut-turmeric mixture and sauté for 3–4 minutes, ensuring the beans are just tender and moisture has cooked off without letting them dry out.
Taste and adjust seasoning if needed. Serve hot with steamed rice or flatbreads.
