Plump shrimp, eggs, and scallions are wok-tossed with rice for a light yet satisfying fried rice. High in protein and lower in calories than many alternatives, this family dish supports a healthy 1500 calorie meal plan.
Pat the shrimp dry and season them lightly with a pinch of salt and pepper. Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat until shimmering.
Add the shrimp in a single layer. Sauté for 1–2 minutes per side until just pink and opaque, then remove to a plate (do not overcook).
Add remaining 1 tbsp oil to the pan. Crack in the eggs and scramble gently over medium heat, stirring constantly, until just set but still soft. Transfer the eggs to the plate with the shrimp.
Increase heat to high. Add frozen peas and carrots and stir-fry for 1–2 minutes until heated through. Add the cooked rice, breaking up any clumps, and stir-fry for another 2–3 minutes.
Return shrimp and eggs to the pan. Add sliced scallions, soy sauce, sesame oil, salt, and pepper. Stir-fry everything together for 2–3 minutes, mixing well, until the rice is hot and evenly seasoned. Serve immediately.
