Green beans sautéed with scrambled eggs, tomatoes, and onions in a simple, nutritious Mexican preparation. This vegetarian, high protein dish is healthy, fresh, and perfect for a quick family meal.
Trim and cut the green beans into 1-inch pieces. Bring a medium pot of salted water to a boil, add green beans, blanch for 2 minutes, then drain and rinse with cold water to stop cooking.
Slice the onion thinly and dice the tomatoes. In a large skillet over medium heat, add 2 tbsp olive oil and sauté onion for about 3 minutes until translucent.
Add the diced tomatoes to the skillet and cook for another 4–5 minutes, stirring, until the tomatoes soften and some juices are released.
Add the blanched green beans to the skillet, season with 1 tsp kosher salt and 0.5 tsp black pepper, and cook for 4 minutes, stirring, to meld flavors.
Lightly beat eggs in a bowl. Reduce the heat to low, push veggies to the edge of the skillet, add eggs, and gently scramble. Mix with the vegetables and cook just until eggs set but are still moist—about 2–3 minutes. Remove promptly from heat and serve.
