Heat 2 tbsp vegetable oil in a large skillet over medium heat until shimmering, then add 1 tsp cumin seeds and sauté for 30 seconds until fragrant.
Add the chopped onion and cook, stirring occasionally, for 3–4 minutes on medium heat until soft and translucent.
Stir in diced potatoes; sprinkle with turmeric powder, red chili powder, and salt, mixing well. Cover and cook on low-medium heat for 5 minutes, allowing potatoes to steam and absorb flavor.
Add shredded cabbage and chopped tomato to the skillet. Toss together, increase heat to medium-high, and stir-fry for 3–4 minutes until the cabbage starts to wilt.
Reduce heat to low, cover, and cook for 12–15 minutes, stirring occasionally, until the vegetables are tender but not mushy. In the final 2 minutes, sprinkle coriander powder and garam masala, stirring gently to combine. Remove from heat and let stand covered for 2 minutes before serving.
