Preheat your oven to 350°F. Butterfly the pork loin by cutting it horizontally, leaving one edge attached, and open it flat.
In a bowl, combine the chopped dried apricots, prunes, cranberries, toasted pecans, walnuts, parsley, minced garlic, ground cinnamon, ground cumin, orange zest, and 1 teaspoon salt.
Evenly spread the dried fruit and nut mixture over the butterflied pork loin, pressing gently to ensure an even layer across the meat.
Carefully roll up the pork loin tightly, starting from one short side. Use kitchen twine to tie and secure the roast at 2-inch intervals.
