Slice the ripe tomatoes and place them into a bowl. Add sea salt, black pepper, and dried oregano, then stir gently and let them sit for at least 10 minutes to draw out juices and intensify flavor.
Rinse the barley friselle very quickly under cold running water, then briefly dip each in a bowl of room temperature water for 15–30 seconds until slightly softened but still crunchy at the core.
Place each soaked frisella on a serving plate, cut side up, ensuring the bread retains structure and is not oversoaked.
Spoon the marinated tomatoes onto each frisella, distributing the juice evenly to soak the bread base.
Top with torn fresh basil leaves and drizzle generously with extra-virgin olive oil. Serve immediately while the friselle have a crisp and moist contrast.
