Kothu Parotta is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
Chop the parotta into small bite-sized strips using a sharp knife or kitchen scissors for even texture.
Heat 2 tbsp oil in a large skillet over medium heat. Add onions and sauté until translucent, about 3 minutes, then add ginger, garlic, and green chili, cooking for 2 more minutes until fragrant.
Add tomatoes and bell pepper, and cook on medium-high heat for another 4–5 minutes until softened. Stir occasionally to prevent sticking.
Push the vegetables to one side and crack in the eggs. Scramble over medium heat until just set, then mix with the veggies.
Add chopped parotta, sprinkle red chili powder, turmeric powder, garam masala, and salt. Toss everything on high heat for 3–4 minutes until parotta is well coated and edges slightly crisp.
Garnish with freshly chopped cilantro, toss briefly, and serve immediately while hot for best texture.
