Golden-fried chicken cutlets are drizzled with a fresh, glossy lemon sauce that balances sweet and tart. This Cantonese-style chicken dish is a crowd-pleasing family dinner that's ready in under 30 minutes.
Pound the chicken breasts to even thickness (about 1/2 inch) for uniform cooking.
Set up 3 shallow plates: one with flour, one with beaten eggs, and one with cornstarch. Dredge chicken in flour, dip in egg, then coat with cornstarch.
Heat vegetable oil in a large skillet over medium-high heat. When shimmering, add chicken and fry 3–4 minutes per side until golden and cooked through.
Transfer chicken to a paper towel-lined plate to drain excess oil. Meanwhile, zest and juice the lemons, reserving 1/4 cup juice and 2 teaspoons zest.
Wipe out the pan, then add chicken broth, lemon juice, zest, soy sauce, sugar, salt, and black pepper. Simmer over medium heat until glossy and slightly thickened, about 3–4 minutes.
Slice chicken, arrange on a serving platter, and drizzle with the hot lemon sauce. Serve immediately.
