Rinse 2 cups flattened rice (poha) gently with water in a colander and drain well; set aside for 5 minutes to soften, taking care to not over-soak.
Heat 2 tbsp oil in a large skillet over medium heat; add 0.5 tsp mustard seeds and let them crackle for 30 seconds.
Add 1 oz peanuts and toast until golden, then stir in chopped onion and sauté over medium-high heat until translucent, about 2-3 minutes.
Add diced potato and 1 chopped green chili; cook covered on low heat, stirring occasionally, until potato is tender (about 5 more minutes).
Sprinkle 0.5 tsp turmeric powder, 1 tsp salt, and 0.5 tsp sugar into the pan; mix well, then add the softened poha, gently folding to combine evenly without mashing.
Push poha mixture to the sides, crack 4 eggs into the center, and scramble them on medium-low heat until just set, then mix into the poha.
Cook for another 2-3 minutes to let flavors meld, then remove from heat. Squeeze juice from half a lemon and sprinkle chopped cilantro on top before serving.
