Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the whisked eggs and scramble just until set, then remove the cooked eggs to a plate.
Add the remaining 1 tablespoon of vegetable oil to the wok. Add diced carrot and cook for 2 minutes, stirring frequently for even softening.
Stir in red bell pepper and frozen peas, continuing to cook for another 2 minutes until the vegetables are crisp-tender.
Add the cooked rice, breaking up any clumps with a spatula. Stir-fry for 3–4 minutes on high heat for maximum separation and light browning.
Return scrambled eggs to the wok. Drizzle in soy sauce, sesame oil, salt, and black pepper. Toss well to coat all ingredients evenly, cooking for 1–2 more minutes to let flavors meld.
