Add finely chopped onion and sauté until golden brown, about 6–7 minutes, lowering the heat to medium if onions brown too fast.
Stir in grated ginger and chopped green chili. Cook for 1 minute until fragrant, then add chopped tomato; cook for 3–4 minutes, stirring to reduce moisture.
Mix in turmeric powder, coriander powder, and salt. Add cauliflower florets; toss to coat, ensuring every piece is well-seasoned.
Cover, reduce heat to low, and cook for 15–18 minutes, stirring occasionally until cauliflower is tender but not mushy. Finish by sprinkling garam masala and allowing flavors to meld for 2 more minutes before serving.
