Delicate enoki mushrooms are quickly stir-fried with garlic and a light sauce. This vegetarian, low calorie family side is fresh, healthy, and cooks in minutes.
Trim the root ends off the enoki mushrooms and gently separate them. Rinse and pat dry with a paper towel.
Slice the scallions thinly on the diagonal. Mince the garlic cloves finely.
Heat the neutral oil in a large nonstick skillet over medium-high heat until shimmering but not smoking.
Add the minced garlic and stir-fry for 20–30 seconds until fragrant but not browned, immediately add enoki mushrooms.
Stir-fry mushrooms for 2–3 minutes, tossing gently to avoid bruising and maintain their shape. Pour in soy sauce, sesame oil, sugar, and black pepper, tossing to evenly coat. Cook an additional 1 minute until mushrooms look glossy and just tender.
Remove from heat, scatter sliced scallions over the top, and serve immediately for the best texture.
