Crispy, spiced, and utterly delicious, Seedai is a classic Indian snack loved across the country. This vegetarian favorite is perfect for family snack time, parties, and festive occasions.
Dry roast the rice flour in a pan over medium heat for 3–4 minutes, stirring constantly until aromatic, then transfer to a bowl to cool.
In a mixing bowl, combine the roasted rice flour, urad dal flour, grated coconut, cumin seeds, ground black pepper, and salt.
Add melted unsalted butter and mix until the mixture resembles coarse sand; then gradually sprinkle water while mixing to form a soft, non-sticky dough.
Pinch off small portions of dough and roll them gently into marble-sized balls, ensuring they are smooth without cracks for even frying.
Heat oil in a deep pan over medium heat (but not smoking). Fry the Seedai balls in small batches, stirring frequently, until golden brown and crisp, about 5–6 minutes per batch.
Drain the fried Seedai on paper towels. Cool completely before serving for maximum crunch.
