Scrambled eggs with crumbled Mexican chorizo create a rich, spicy breakfast classic. This high protein, keto-friendly dish is a fresh, family-friendly morning meal full of bold flavors.
Warm 1 tbsp olive oil in a large skillet over medium heat. Add diced onion and sauté for 2–3 minutes until softened and fragrant.
Remove the casing from the Mexican chorizo and crumble it into the pan with the onion. Cook for 4–5 minutes, stirring to break the chorizo into small pieces and render out the fat.
Once the chorizo is fully browned and fat has released, reduce the heat to medium-low. Push some of the sausage mixture aside to ensure even cooking.
In a bowl, whisk the eggs with salt and black pepper until well combined. Pour the eggs over the chorizo mixture in the skillet.
Gently fold the eggs into the chorizo, stirring slowly and constantly, to create large, soft curds. Cook for 3–4 minutes until just set but still moist—avoid overcooking. Serve hot with your favorite garnishes.
