Sweet, aromatic, and deeply satisfying, Kalakand is a beloved Indian dessert with centuries of tradition. This family celebration staple adds sweetness to festivals, weddings, and everyday moments of joy.
Grease an 8-inch square pan with 1 tbsp of ghee and set aside.
In a heavy-bottomed pan over medium heat, combine ricotta cheese and whole milk. Stir continuously to avoid sticking and cook until the mixture thickens, about 12–15 minutes.
Add sugar and cardamom powder. Lower the heat to medium-low, and stir often as the mixture releases moisture and then thickens again; cook until you see the mixture leaving the sides of the pan.
Add the remaining ghee and rose water. Continue stirring and cook until the mixture forms a soft mass that holds shape.
Turn off the heat and quickly spread the mixture into the prepared pan. Smooth the top and sprinkle chopped pistachios evenly. Let cool for at least 30 minutes before slicing into squares and serving.
