Cut paneer into 1-inch cubes; dice both bell peppers and onion into similar-sized squares for even grilling.
In a large bowl, whisk Greek yogurt until smooth, then stir in ginger-garlic paste, garam masala, cumin, coriander, turmeric, chili powder, salt, lemon juice, and 1 tbsp oil.
Gently fold in the paneer, peppers, and onion. Coat well, cover, and marinate in the refrigerator for at least 30 minutes (up to 2 hours) to allow flavors to penetrate.
Thread marinated paneer and vegetables onto skewers, alternating for color and even cooking.
Preheat oven broiler to high or prepare an outdoor grill. Place skewers on a foil-lined tray. Brush with remaining oil and broil/grill for 10–12 minutes, turning once, until edges char slightly and paneer is heated through.
