Peel and cut the sweet potatoes into chunks, then steam them until fork-tender, about 15 minutes on medium heat.
Mash the hot sweet potatoes in a large bowl until smooth; let cool slightly to prevent burning your hands during mixing.
Add tapioca starch, sugar, and salt to the mashed sweet potatoes. Knead with your hands until a smooth, pliable dough forms—add a bit more starch if the mixture is too sticky.
Roll the dough into 1-inch balls, making sure they are evenly sized for uniform cooking.
Heat vegetable oil in a deep pan to 320°F (160°C). Fry the balls in batches, stirring gently and frequently, for 5–7 minutes until golden brown and crispy outside but still chewy inside. Drain on paper towels before serving.
