Roasted poblano peppers stuffed with melting cheese, battered, and fried to golden perfection. This beloved vegetarian Mexican classic makes a satisfying family dinner full of smoky, cheesy goodness.
Char the poblano peppers directly over a gas flame or under a broiler, turning until the skin is completely blackened and blistered on all sides, about 8–10 minutes. Transfer peppers to a bowl, cover with plastic wrap, and let steam for 10 minutes.
Carefully peel off the charred skins. Make a slit lengthwise in each pepper and gently remove the seeds, leaving stems attached. Pat the inside of each pepper dry with paper towel.
Stuff each poblano generously with Monterey jack cheese, pressing the edges together to seal. Lightly dust the stuffed peppers with all-purpose flour to help the batter adhere.
Separate the eggs. Beat egg whites until stiff peaks form, then gently fold in the yolks along with a pinch of salt and black pepper to make a fluffy batter.
Heat 1 cup of vegetable oil in a deep skillet over medium-high heat until shimmering (350°F). Dip each floured chile into the egg batter, coating well, and carefully lower into the hot oil. Fry, turning occasionally, until golden and crisp on all sides, 3–4 minutes per pepper. Drain on paper towels, sprinkle with additional salt, and serve hot.
