Cut the sponge cake into thin slices and line a medium mixing bowl fully, pressing the slices to form a dome, leaving enough slices for the top later.
In a separate bowl, whisk ricotta cheese with powdered sugar and vanilla extract for 2–3 minutes until smooth and creamy.
Whip the heavy cream until firm peaks form, then gently fold into the ricotta mixture to keep the filling light.
Stir in chopped semi-sweet chocolate and candied fruit. Add marsala wine and cocoa powder, blending until evenly combined.
Spoon the filling evenly into the cake-lined bowl, smoothing carefully to avoid air gaps; cover with remaining cake slices to seal the dome.
Wrap bowl tightly with plastic wrap and chill in the refrigerator at least 2 hours to set the semifreddo texture.
