Fresh oysters simmer with ginger in a light, warming broth. This protein-rich, mineral-packed family soup is a traditional tonic for vitality and immune support.
Slice ginger thinly and cut scallions into 2-inch pieces; cube the tofu into bite-sized pieces.
Bring chicken broth to a gentle simmer in a medium pot over medium heat.
Add the ginger and scallion; simmer for 8 minutes to infuse aromatic flavors.
Lower heat to medium-low and gently add the oysters (with liquor) into the broth; simmer until the oysters curl and plump, about 3 minutes (do not boil).
Add tofu cubes and soy sauce; cook for another 2–3 minutes, stirring gently to avoid breaking tofu.
Season soup with sesame oil, white pepper, and salt; adjust seasoning to taste and serve immediately.
