Rice is wok-fried with generous golden garlic chips for an incredibly aromatic and simple dish. This vegetarian family staple requires just three ingredients and pairs with virtually any protein.
Slice garlic cloves thinly for chips and crush the remaining cloves for flavor.
Heat 2 tablespoons of vegetable oil in a wok over medium heat. Add sliced garlic and fry, stirring constantly, until golden and crisp, about 2 minutes. Remove garlic chips with a slotted spoon and drain on paper towel.
Add the last tablespoon of oil to the pan. Add crushed garlic and sauté until fragrant, about 30 seconds, taking care not to burn.
Increase heat to medium-high. Add cooked rice and break up any clumps, tossing to coat each grain with the aromatic oil.
Season with salt and black pepper. Stir-fry continuously for 3–5 minutes so the rice gets heated through and lightly toasted. Fold in garlic chips just before serving for maximum crunch.
