Roasted peppers peeled and dressed in olive oil and garlic are vegetarian perfection. This mediterranean family side is fresh, healthy, and a vibrant addition to any Italian antipasto spread.
Preheat your oven to 450°F and line a baking sheet with parchment paper for easy cleanup.
Place whole red and yellow bell peppers on the prepared sheet, making sure they are spaced apart for even roasting.
Roast the peppers in the top third of the oven for 25–30 minutes, turning them every 8–10 minutes with tongs until the skins are deeply blistered on all sides.
Transfer the hot roasted peppers to a large bowl and cover tightly with plastic wrap or a lid. Let them steam for at least 10 minutes to loosen the skins.
Peel off the charred skins, remove stems and seeds, and slice the peppers into thick strips. Gently toss the strips with extra virgin olive oil, thinly sliced garlic, sea salt, and black pepper while still slightly warm. Serve at room temperature.
