Spiced cake is soaked in tres leches sauce until it's impossibly moist, then topped with Biscoff cookie butter, whipped cream, and cookie pieces. The Biscoff adds caramelized spice notes that elevate classic tres leches. This disappeared in one sitting.
1. Beat softened unsalted butter, cream cheese, and Biscoff cookie butter together until light and creamy. This combo ensures the cookie base has Crumbl’s signature ultra-soft, moist texture and caramelized spice flavors.
2. Add granulated sugar and brown sugar; beat until fluffy. Mix in eggs, egg yolk, and vanilla extract. Add whole milk. Mix until smooth; this step guarantees even aeration for a thick, pillowy crumb.
3. Sift together all-purpose flour, bread flour, cornstarch, baking powder, and cinnamon. Gradually add to wet ingredients. Use bread flour and cornstarch to mimic Crumbl’s chewy yet soft texture. Don’t overmix: stop when no dry streaks remain.
4. Scoop dough into 8 oversized balls (about 145g each), flatten slightly into 4–5 inch discs. Chill dough for at least 1 hour — this is Crumbl’s trick for cookies that stay thick and soft, not spreading thin.
5. Bake in a preheated 350°F oven for 13–15 minutes, just until edges are set and centers are soft. Let cool on pan. While cooling, whisk sweetened condensed milk, evaporated milk, and heavy cream for tres leches soak.
6. When cookies are barely warm, gently poke holes across the top with a fork. Slowly spoon tres leches mixture over each until absorbed. Let cookies rest 30 minutes for full soak.
7. Spread a layer of Biscoff cookie butter over cookies. Pipe or dollop whipped cream on top. Finish with generous sprinkle of crushed Biscoff cookies. Serve chilled or slightly cool for true Crumbl experience.
