Surti Papdi Sabzi is a flavorful Indian vegetable preparation that celebrates fresh, seasonal produce with bold spices. This healthy vegetarian dish is perfect for family dinners, DASH diet, and everyday clean eating.
Heat the vegetable oil in a large heavy-bottomed pan over medium heat. Add mustard seeds and cumin seeds; let them splutter for 30 seconds.
Stir in asafoetida, then immediately add the potatoes and sweet potatoes. Sauté for 4–5 minutes, allowing the edges to turn golden.
Add eggplant, surti papdi, and green peas. Mix well and reduce the heat to medium-low, ensuring an even vegetable distribution.
Sprinkle turmeric, red chili powder, coriander powder, and salt over the vegetables. Stir thoroughly so all pieces are well coated with spices.
Cover and cook on low heat for 18–20 minutes, stirring occasionally and adding 1–2 tbsp water if sticking, until vegetables are tender but not mushy.
Uncover and sprinkle garam masala and jaggery. Increase heat to medium and sauté for another 3–4 minutes for the flavors to meld.
Turn off the heat, stir in lemon juice, and garnish with fresh chopped cilantro just before serving.
