Tender Chinese spinach (amaranth) is quickly wok-tossed with garlic for a nutritious green side. This vegetarian, healthy dish is packed with iron and ideal for a clean eats family meal.
Wash the Chinese spinach thoroughly, shaking off excess water but leaving a bit for moisture during cooking.
Heat a wok or large skillet over medium-high heat until just starting to smoke. Add vegetable oil and swirl to coat.
Add the sliced garlic and stir-fry for 10–15 seconds until aromatic but not brown for a fresh flavor base.
Immediately add the spinach. Toss constantly over high heat for 1–2 minutes, folding with tongs to cook evenly and prevent sticking.
Season with salt and white pepper. Continue to stir-fry just until the leaves are wilted and stems are slightly tender but still vibrant, about 1 minute more. Serve hot.
