Turkey and vegetables on a sheet pan — Monday dinner with one pan to wash. High protein, low effort, exactly what the start of a week should be.
Preheat your oven to 425°F, ensuring racks are positioned for even roasting.
Slice the turkey breast into 1-inch thick strips for uniform cooking; do the same with bell peppers, zucchini, and red onion.
On a large sheet pan, spread out potatoes, broccoli, and all other vegetables, then add turkey strips on top.
Drizzle olive oil evenly and sprinkle with garlic powder, oregano, salt, and black pepper. Toss gently to coat all pieces.
Roast for 22–27 minutes until turkey reaches 165°F internally and vegetables are lightly browned; turn vegetables and turkey halfway for even caramelization.
