In a large mixing bowl, combine whole wheat flour, fenugreek leaves, turmeric powder, red chili powder, cumin seeds, and salt.
Add yogurt and 1 tbsp oil to the mixture, then gradually add water while kneading until a soft, smooth dough forms. Rest the dough, covered, for 15 minutes to allow moisture to absorb evenly.
Divide the rested dough into 8 equal portions, rolling each into smooth balls. Flatten with your palm and lightly dust with flour.
Using a rolling pin, roll each portion into a thin, round disc approximately 6 inches wide, rotating to maintain even thickness and prevent sticking.
Heat a non-stick skillet or tawa over medium-high. Place a thepla on the hot surface and cook for about 30 seconds, then flip. Brush the top lightly with oil and cook both sides until golden spots appear. Repeat for all theplas, stacking them in a cloth-lined container to retain softness.
