Baked stuffed lobster filled with a buttery cracker and seafood stuffing is a decadent, high protein New England showstopper. This impressive family dinner is perfect for celebrations and special occasions.
Preheat your oven to 425°F. Line a large baking sheet with foil to catch drips.
Split each lobster in half lengthwise, keeping the shells intact, and gently clean out the tomalley if desired.
In a bowl, combine crushed buttery round crackers, scallops (chopped), shrimp (chopped), celery, shallots, and fresh parsley. Drizzle in half the melted butter, all the lemon juice, white wine, and toss together. Season with salt, black pepper, and paprika.
Spoon the stuffing mixture into the cavity of each lobster, packing it lightly but generously. Brush the top with the remaining melted butter for even browning.
Bake stuffed lobsters on the prepared baking sheet for 22–25 minutes, basting once with butter mid-bake, until the stuffing is crisp and golden, shrimp and scallops are just opaque, and lobster meat has turned white but remains moist. Rest 5 minutes before serving with lemon wedges.
