Chicken pieces and rice cook together in a clay pot until a prized crispy rice crust forms at the bottom. This protein-rich family one-pot meal is deeply aromatic and satisfyingly simple.
Rinse rice under cold water until the water runs clear; drain and set aside.
Slice chicken thighs into bite-size pieces, mix with 1 tbsp soy sauce, 0.5 tbsp dark soy sauce, oyster sauce, sesame oil, sugar, white pepper, and grated ginger. Marinate for 20 minutes.
In a clay pot or heavy-bottomed pot, layer the drained rice and add 2 cups of water. Level the rice surface, cover, and cook over medium heat until water is almost absorbed (about 10–12 minutes).
Arrange marinated chicken, sliced Chinese sausage, and sliced shiitake mushrooms over the rice without stirring. Reduce heat to low, cover, and cook for another 15 minutes to allow steam to finish cooking and a crispy crust to form.
Remove from heat. Drizzle remaining soy sauce and dark soy sauce over the top, cover, and let rest for 5 minutes. Top with chopped scallions before serving and gently mix all the layers together.
