Rinse the fresh methi leaves thoroughly and finely chop them, then soak the cashews in 2 tbsp warm milk for 10 minutes before blending into a smooth paste.
Heat sunflower oil in a nonstick skillet over medium flame. Add cumin seeds and let them sizzle for 30 seconds, then add finely chopped onion, ginger, garlic, and green chili. Saute until onions turn translucent.
Add the chopped methi leaves and cook on medium-high heat for 3 minutes, stirring frequently to prevent excess moisture build-up and bitterness.
Add green peas, cashew paste, salt, and black pepper. Reduce heat to low and cook for 5 minutes, stirring occasionally, allowing peas to soften and flavors to meld.
Pour in milk and heavy cream, add garam masala, and simmer gently over low heat for 5-6 minutes. Stir occasionally and ensure the sauce thickens without boiling, then serve hot.
