John Dory baked in parchment with herbs for a delicate mediterranean meal. This high protein dish is a fresh, healthy family dinner that locks in moisture and flavor beautifully.
Preheat your oven to 400°F. Cut 4 large pieces of parchment paper, each big enough to wrap a fillet and vegetables tightly.
Slice the zucchini, yellow bell pepper, and shallots thinly. Halve the cherry tomatoes and slice half the lemon; reserve the other half for squeezing later.
Arrange a bed of sliced vegetables and cherry tomatoes in the center of each parchment. Place a John Dory fillet on top, sprinkle with sea salt, black pepper, fresh thyme, and parsley.
Drizzle each portion with olive oil and top with 2-3 lemon slices. Fold the parchment over each fish and crimp the edges very tightly to seal and create a packet.
Bake the packets on a sheet pan in the preheated oven for 20 minutes. Remove from the oven, let rest for 2 minutes, then carefully open the packets (watch for hot steam) and serve immediately with a squeeze of fresh lemon.
