Cook the long grain white rice according to package instructions, keeping it warm and fluffy.
Whisk the eggs with half the salt and a pinch of white pepper for a smooth mixture.
Heat 1 tbsp neutral oil in a large nonstick skillet over medium-high heat. Pour in beaten eggs, stir gently until just set and still creamy. Quickly transfer eggs out to a plate.
