Crispy spam cubes and fried egg over wok-fired rice. This Hawaiian-inspired high calorie lunch is cheap, fast, and hits harder than you'd expect.
Cut spam into small cubes and finely chop green onions.
Heat 2 tbsp vegetable oil in a wok over medium-high heat. Add spam cubes and fry until golden and crispy for about 3–4 minutes.
Push the spam to one side, add eggs and scramble gently for 1–2 minutes until just set.
Add the cooked rice to the wok, increase heat to high, and stir-fry with spam and eggs for 3–5 minutes while tossing constantly for even cooking.
Add green onions, soy sauce, sesame oil, and black pepper. Stir-fry everything together for 2 more minutes, ensuring rice stays fluffy and not soggy.
Taste and adjust seasoning if needed. Serve hot with an extra fried egg on top for each plate if desired.
