Simple yet aromatic, Khara Pongal is a traditional Indian rice preparation with authentic spicing. This vegetarian dish is a family kitchen staple that adds variety and flavor to everyday meals.
Rinse the rice and split yellow moong dal thoroughly under running water until the water runs clear.
In a heavy-bottomed pot or pressure cooker, combine washed rice and dal with 4 cups of water. Cook on medium heat (or pressure cook for 3 whistles), until both are soft and mushy.
While rice and dal are cooking, heat 3 tbsp ghee in a separate frying pan over medium heat. Add cashew nuts and roast until light golden. Remove and reserve.
In the same ghee, add cumin seeds and whole black peppercorns. When seeds splutter, add minced ginger and curry leaves; sauté on low heat for 30 seconds until aromatic.
Add cooked rice and dal mixture to the pan with spices. Season with salt and fold gently. If needed, add more ghee or hot water to reach a creamy, porridge-like consistency. Stir well, top with roasted cashews, and serve hot.
