Earthy mushroom dumplings with a savory umami filling are a vegetarian dumpling delight. A healthy, fresh family recipe perfect for clean eats and meatless meals.
Finely chop cremini mushrooms, green cabbage, scallions, garlic, and ginger. Squeeze excess water from tofu and crumble it into small pieces.
Heat 1 tsp sesame oil in a skillet over medium-high. Sauté mushrooms until deeply browned and water evaporates, about 6 minutes.
Add cabbage, scallions, garlic, ginger, and a pinch of salt. Stir-fry for 3–4 minutes until tender. Remove from heat and cool slightly.
Mix mushroom-cabbage filling with crumbled tofu, 2 tbsp soy sauce, and remaining sesame oil. Season with black pepper and salt if needed. Chill mixture 10 minutes.
Place 1 tbsp filling in each dumpling wrapper. Wet edges lightly; pleat and seal firmly.
Steam dumplings over boiling water for 7–8 minutes, making sure they do not touch. Optionally, pan-fry with a splash of oil for 2 minutes on one side to create a crispy bottom.
