1. Rinse glutinous rice and soak in water for at least 2 hours; drain thoroughly before using.
2. Prepare duck by removing excess fat, patting dry, and marinate inside and out with soy sauce, Shaoxing wine, salt, and white pepper for 30 minutes.
3. Dice mushrooms, sausage, chestnuts, lotus seeds, and jujube dates. Mix with dried longan and soaked rice; season filling with oyster sauce, sesame oil, and sugar.
