Sabudana Vada is a traditional Indian dish with authentic regional flavors and aromatic spicing. This beloved preparation is a family favorite that showcases the incredible diversity of Indian cuisine.
Rinse 1 cup sabudana thoroughly in cold water until water runs clear, then soak it with just enough water to cover for 6–8 hours or overnight. Drain and fluff before use.
Boil 2 medium potatoes, peel, and mash them until smooth. Allow to cool completely to avoid a sticky mixture.
In a mixing bowl, combine soaked sabudana, mashed potatoes, 0.5 cup roasted crushed peanuts, 0.25 cup chopped cilantro, 1 finely chopped green chili, 0.5 tsp cumin seeds, 1 tsp salt, 1 tsp lemon juice, and 0.5 tsp sugar. Mix well with clean hands until evenly combined.
Take a small amount of mixture and shape into flat, round patties about 1/2-inch thick, pressing gently to keep them intact. Avoid pressing too hard to prevent breakage.
Heat 2 cups oil in a deep frying pan over medium-high heat. Once the oil is hot (350°F; test with a small piece), carefully slide in the patties in small batches. Fry without disturbing for 3–4 minutes, then turn them once. Continue frying until both sides are golden and crisp. Drain vadas on paper towels and serve hot.
