Cut the pork shoulder into 1.5-inch cubes, trimming off excess fat for even braising.
Heat the vegetable oil in a large Dutch oven over medium-high heat; sear pork cubes in batches until browned on all sides—don’t overcrowd the pot.
Reduce to medium heat. Add chopped onion and sauté for 3 minutes, stirring to release any browned bits.
Add garlic, jalapeños, cumin, oregano, salt, and pepper. Stir and cook until fragrant, about 1 minute.
Add chopped tomatoes, then cover partially and simmer on low heat for 1 hour, stirring occasionally and adding a splash of water if sauce thickens too much.
Once pork is tender and sauce has reduced, taste and adjust salt as needed. Serve hot as a taco filling or main dish.
