Refreshing mung bean ice bars with natural sweetness and cooling properties are a summer favorite. A family treat with fresh, clean green bean flavor.
Rinse and soak mung beans in 2 cups of water for at least 6 hours or overnight to soften them evenly.
Drain, then add soaked mung beans and 3.5 cups fresh water to a saucepan and bring to a boil over medium-high heat.
Reduce heat to medium-low, skimming off foam, and simmer for 40–45 minutes until beans are fully tender and split.
Strain the beans, reserving the cooking liquid, and blend beans with their liquid until very smooth for silky texture.
Return puree to the saucepan, stir in sugar and salt, and cook over low heat, stirring frequently, until sugar dissolves completely.
Cool the mixture to room temperature, then stir in whole milk for creaminess.
Pour mixture into ice bar molds, insert sticks, and freeze for at least 6 hours or overnight until solid.
