Kesar Barfi is a smooth, fudge-like Indian sweet made with condensed milk and premium ingredients. This elegant confection is a treasured gift during Diwali and a centerpiece of family sweet boxes.
Line an 8x8 inch pan with parchment paper and set aside. Gently soak saffron threads in 1 tbsp warm heavy cream for 10 minutes to draw out their color and aroma.
In a nonstick pan, melt unsalted butter over low-medium heat. Stir in the condensed milk, ensuring even mixing and no burning.
Add milk powder and continue stirring constantly, managing the heat between low and medium to prevent sticking. Pour in the saffron-infused cream, cardamom powder, and rose water.
Cook the mixture, stirring frequently, until it thickens into a soft dough and just leaves the sides of the pan. This will take about 10–15 minutes; do not overcook or the barfi will become too dry.
Transfer the mixture immediately into the prepared pan, pressing to level. Top with chopped pistachios and lightly press them in. Allow to cool completely at room temperature, then cut into squares and serve.
