Thin unleavened flatbread from Romagna, filled with squacquerone and prosciutto, is street food perfection. A versatile mediterranean wrap that's great for family meals and easy to customize for any calorie goal.
In a large bowl, combine the all-purpose flour, salt, and baking soda. Add lard and milk, then gradually pour in 2/3 cup lukewarm water, mixing to form a soft and smooth dough.
Knead the dough on a lightly floured surface for about 7 minutes until elastic. Allow it to rest, covered, at room temperature for 30 minutes.
Divide the dough into 4 equal portions. Roll each piece into a thin round, about 9–10 inches in diameter, keeping the thickness even for uniform cooking.
Preheat a cast iron skillet over medium-high heat. Cook each piadina for 2 minutes per side, flipping once, until golden spots appear but the bread remains soft.
Immediately fill each warm piadina with squacquerone cheese and prosciutto. Fold in half, let cheese soften from residual heat, and serve warm.
