Louisiana red beans and rice slow-simmered with smoked sausage and Creole seasonings is a Monday family tradition in New Orleans. This protein-packed, budget-friendly dish is hearty, flavorful, and endlessly comforting.
Rinse the red kidney beans thoroughly, then soak them in water overnight; drain before using.
Slice the smoked sausage into 1/2-inch rounds and sauté in a large Dutch oven over medium heat for 5 minutes until browned; transfer to a plate.
In the same pot, add chopped onions, bell pepper, and celery. Sauté over medium heat for 6–8 minutes until softened, stirring occasionally.
Add minced garlic, bay leaf, Creole seasoning, thyme, black pepper, kosher salt, and smoked paprika. Stir and cook for 1 minute until fragrant.
