Rinse the flattened rice in cold water for 1–2 minutes, drain thoroughly, and set aside to ensure it softens without turning mushy.
In a large bowl, combine the plain yogurt and whole milk. Whisk until smooth for a creamy consistency.
Add the softened poha to the yogurt-milk mixture, along with granulated sugar and cardamom powder. Stir gently to mix—do not overmix to preserve poha texture.
Slice the banana and fold it into the mixture. Add raisins and half of the chopped pistachios and almonds, reserving the rest for garnish.
Cover and chill in the refrigerator for at least 15 minutes to blend flavors, then stir again, portion into bowls, and garnish with the remaining nuts just before serving.
