Preheat oven to 350°F (175°C). Pat the pork loin dry with paper towels to ensure even browning.
Using a small paring knife, make deep slits all over the pork; insert sliced garlic and rosemary sprigs into the slits for full flavor infusion.
Rub the roast evenly with olive oil, kosher salt, and black pepper, coating all sides.
Place the pork loin on a rack in a roasting pan and roast uncovered for about 1 hour 20 minutes, or until the internal temperature reaches 145°F, basting once with pan juices at the halfway point.
Remove from the oven and tent loosely with foil; let rest for 10–15 minutes before slicing to preserve juiciness and prevent drying out.
