Marinated drunken crab in fragrant Shaoxing wine is a luxurious, fresh cold appetizer. A high protein, family celebration dish with refined flavor.
Scrub the live blue crabs under cold running water, then place them in ice water for 20 minutes to sedate.
Combine Shaoxing wine, water, soy sauce, sugar, Sichuan peppercorns, star anise, scallions, ginger slices, and garlic in a saucepan. Bring to a boil over medium-high heat, then reduce to low and simmer for 10 minutes. Cool the marinade completely.
With the crabs fully sedated, remove the top shells and gills, then cut each crab in half for optimal marinade penetration.
Place the cleaned crab pieces in a glass or non-reactive container. Pour the cooled marinade over the crabs, making sure all surfaces are covered.
Seal and refrigerate for at least 2 hours, ideally up to 6 hours. Flip crabs halfway through for even marination. Serve cold as an appetizer.
