Masoor Khichdi is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse the red lentils and basmati rice together until the water runs clear; soak for 10 minutes and drain.
Heat ghee or oil in a large heavy-bottomed pot over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.
Add finely chopped onion, sauté for 3-4 minutes until translucent, then stir in minced ginger and garlic, cooking for another minute.
Add diced tomato, turmeric, coriander, and black pepper; cook for 2 minutes until tomatoes break down.
Stir in the drained rice and lentils, then add diced carrot and peas; mix well so grains are coated with spices.
Pour in water and add salt. Bring mixture to a boil, then reduce heat to low, cover, and simmer gently for 25-30 minutes, stirring occasionally. Add a splash of water if it thickens too much.
Check doneness: grains and lentils should be very soft but not mushy. Turn off heat, fluff gently, and let stand covered for 5 more minutes before serving.
