Murukku is a crunchy, savory Indian snack seasoned with aromatic spices, perfect for tea time. This addictive vegetarian nibble is a family pantry staple and a crowd-pleaser at gatherings.
In a large mixing bowl, combine rice flour, urad dal flour, sesame seeds, crushed cumin seeds, asafoetida, and salt.
Melt the unsalted butter and add it to the flour mixture. Mix well using your hands until the mixture resembles coarse crumbs.
Gradually add water in small amounts, kneading into a smooth, pliable dough that is moist but not sticky.
Grease a murukku press and fit it with a star or round disc. Fill the press with dough. Pipe spirals of dough (about 2–3 inches wide) onto parchment squares or a tray.
Heat oil in a deep pan over medium heat. When the oil is moderately hot (around 350°F), gently slide in 3–4 spirals at a time. Fry on medium heat, turning occasionally, until each murukku is golden and crisp, about 4–6 minutes per batch.
Remove the murukku with a slotted spoon and drain on paper towels. Cool completely before storing in an airtight container.
