Slice the boneless pork loin thinly, about 1/8 inch, against the grain for best texture.
Combine brown sugar, soy sauce, honey, oyster sauce, five-spice powder, white pepper, and the egg in a bowl. Whisk until completely dissolved and smooth.
Add sliced pork to the marinade, ensuring each piece is coated. Marinate in the fridge for at least 3 hours for deep flavor absorption.
Drain excess marinade and lay pork slices flat on a wire rack set over a baking sheet. Bake at 250°F for 45 minutes, flipping halfway to ensure even moisture removal.
Increase oven temperature to 350°F and bake for an additional 10–15 minutes until edges caramelize and jerky is dry but still tender. Watch closely to prevent burning.
